Description: Come find out just how easy it is to eat local in Western Washington, a region that leads the country with its local food system in many ways. Learn why eating local is a globally revolutionary act and why true homeland security begins with your dinner plate. In our society, too many spend far too little time thinking about food - about eating, yes, but not about food. Come learn to be a thinking eater, rather than an unthinking consumer and to discuss what “local” really means. 100 miles? Washington state? Is local in the mind of the beholder? How perfect do you need to be to consider yourself a “locavore.” Let's talk and think about local food.

Instructor:Zachary D Lyons is a freelance food and agriculture writer based in Seattle. He served as executive director of the Washington State Farmers Market Association from 1999-2005, and served on the board of the National Association of Farmers Market Nutrition Programs. He currently serves as vice president of the Seattle Chapter of Chefs Collaborative, speaks around the country on local food economies, organizes events promoting local food and is a certified barbecue judge.
